Stilton and Prosciutto

We’ve all fallen for the charcuterie board. The basic smoked meat and cheese appetizer has been elevated to masterful presentations boasting an array of cheese, fruit, breads, olives and slices of meat twisted and turned into flower-like petals. However, if you’re serving three or four hors d’oeuvres, consider a simpler concept. A seasonal cheese like Stilton rightfully earns a place on the Thanksgiving table. This classic English Christmas staple reminds me more of a Gorgonzola than a traditional blue cheese. The sense of a tang upon tasting it somehow never materializes in the mouth leaving the most wonderful mild flavor. It pairs well with silky, salty sliced prosciutto. There is always beauty in simplicity.
